Happy Monday!
We had a Grandparents Day celebration over the weekend (more on that later in the week), and I made an apple cake that turned out to be quite delicious.
If you’re looking for something to make with all those apples you’ll be getting from the orchard, I’ve got you covered. This is an adaptation of a carrot cake recipe from my old school Betty Crocker cookbook, and it was oh so yummy!

Apple Cake
- 1.5 cups sugar
- 1 cup canola oil
- 3 eggs
- 2 cups flour
- 2 teaspoons cinnamon
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 3 cups chopped tart baking apples (I used Fuji)
- Beat sugar, oil, and eggs in a large bowl with electric mixer about 30 seconds.
- Add remaining ingredients except apples and mix on low speed for one minute.
- Stir in apples
- Pour into a greased 9×13 pan.
- Bake in a 350 degree oven for 40-45 minutes.
- Allow cake to cool completely before frosting.
And speaking of frosting . . . the cream cheese frosting on this cake is really the star of the show!
Cream Cheese Frosting
- 1 8oz cream cheese, softened
- 1/4 butter, softened
- 3 teaspoons milk
- 1 teaspoon vanilla
- 4 cups powdered sugar
- Beat cream cheese, butter, milk, and vanilla with an electric mixer until smooth.
- Gradually beat in powdered sugar, one cup at a time, on low speed until frosting is smooth and spreadable . . . and delicious!
- Spread on cake and refrigerate until ready to serve.
